Pork Belly w/ Cabbage

When cabbage is fresh and in season, it is sweet, nutritious, and an affordable way to feed lots of people. Toss cabbage with garlic in a smoking hot wok seasoned with sliced pork belly, and you'll have a delicious plate of goodness. This is one of the many ways a wok can facilitate whipping up a hearty table laden with a colorful variety of tasty dishes. 

Recipe: Stir-Fry Cabbage

Frozen pork belly 4-6 slices

Cabbage (green, savoy or napa) 1/4 head, cut into one inch pieces

Garlic 2 cloves sliced

Chili pepper 1 thinly sliced

Black vinegar 3 tablespoons 

Sugar 1/2 teaspoon 

Salt generously

White pepper to taste

Add the slices of pork belly to a cold wok. Heat wok and cook until the fat falls out and the pork belly starts to brown slightly

Add in sliced garlic and cook until the garlic just starts to brown

Add in the cabbage, stir until the pork fat is evenly distributed cook and the cabbage is slightly soft and translucent

Drizzle in black vinegar around the outer rim of the wok letting it fall down the side into the cabbage. Stir vigorously and season with salt and white pepper to taste, remove from heat and serve.
